Flatbread is the quiet option at Subway. It is not advertised, it is not on every menu board, and it is the default only for breakfast at some stores — yet it is the format regulars pick when they want the filling to lead rather than the bread.
What Subway flatbread actually is
A soft, thin, slightly chewy oval bread, pressed rather than risen, warmed on the toaster and folded around the filling. Unlike Subway's rolls it is not baked from frozen dough in store, so it does not have the crust or air pocket of Artisan Italian — and it does not go stale in the same way either.

- Wet fillings. Flatbread handles a buffalo chicken or teriyaki build with less structural collapse than a soft roll.
- Eating one-handed. It folds and holds; a footlong does not.
