Sauce is the single most consequential free decision at the Subway counter. Vegetables add almost nothing to a sandwich's calorie count; sauce can add three hundred calories to a Footlong without changing how full you feel. It is also the difference between a memorable sub and a dry one, so the goal is not avoiding it — it is spending it deliberately.

Availability varies: every store carries the core set, and a handful of the others are regional or rotate with limited-time promotions.

Calories are per standard 6-inch serving and roughly double on a Footlong. Servings are poured by hand, so a heavy pass of ranch can be closer to 150 calories than 110. Vegan status is based on published US ingredient statements and can change — always check current information if it matters to you, and read our vegetarian and vegan guide.

The four sauces that do the most work

  1. Red wine vinegar. Zero calories, and it makes cold subs taste seasoned rather than plain. If you only change one thing about how you order, change this.
  2. Yellow mustard. Five calories, sharp, and it stops turkey and ham from tasting like nothing.
  3. Chipotle southwest. The best flavour-per-calorie creamy sauce. Use it instead of ranch and mayonnaise, not alongside them.
  4. Sweet onion. The only sweet sauce worth the sugar, and only on chicken or veg.

Combinations that actually work

  • Mustard + red wine vinegar + black pepper + oregano — the classic deli finish.
  • Chipotle southwest + jalapeño + extra onion — steak, MexiCali, egg breakfast subs.
  • Buffalo + light ranch — chicken; use light ranch or it becomes a dip.
  • Oil + vinegar + oregano — B.M.T., Spicy Italian, Supreme Meats.
  • Honey mustard + light mayo — clubs and turkey, especially for children.

Combinations to avoid

Two creamy sauces on the same sub (ranch and mayonnaise, garlic aioli and chipotle) is the most common mistake — you cannot taste either one and you have added 200 calories. Sweet plus smoky (sweet onion and BBQ) fights itself. And sauce plus a wet toasted filling like marinara mostly produces a soggy sandwich; see our meatball guide.

Sauce on the side

Any sauce can be requested in a cup, and it is the best trick on the menu for two situations: delivery orders where a sauced sub steams in the bag, and calorie control, because you will use less than the counter pours. Ask when you order rather than after it is wrapped.
