Buffalo Chicken is Subway's on-and-off item: it appears as a national promotion, then survives at franchises where it sells and quietly disappears where it doesn't. When it is available it is one of the more interesting things on the board — and one of the easiest to ruin by ordering it the default way.
What's on it
Chicken — crispy or grilled depending on your store — tossed or drizzled in buffalo sauce, usually with ranch, lettuce and tomato. The sauce is Frank's-style: vinegar-forward cayenne rather than a chilli-heat build.
How spicy is it, honestly?
Mild to medium. If you eat hot wings it will read as tangy rather than hot, especially once ranch is added — ranch is dairy and it cancels most of the burn. The build that stops it going soggy
- Toasted, on Italian herbs & cheese, with pepper jack.
- Ask for buffalo sauce on the chicken, not on the bread. This is the whole fix.
- Ranch on the top half only, or on the side if your store allows.
- Lettuce added after toasting, plus red onion and jalapeño.
